- Capsaicin, the compound that gives chiles their "burn" is found mostly in the seeds and membranes. Include or omit those parts to control the heat.
- Wear gloves to avoid touching the capsaicin with your fingers.
- Never discard any part of a chile down the garbage disposal. The vigorous grinding action mixed with water creates a subtle mist that carries the capsaicin throughout the air.
